Dulse Leaf

Easy to use
Simply add it to mash potato, salads, pasta dishes, veggie burgers or even as a pizza topping. Dulse functions as a nutritious salt substitute and intensifies the flavour of many dishes.

Texture
Chewy when raw, silky smooth when cooked.

Health benefits
Due to its high level of zinc and vitmans B6 and B12, Dulse is a real immune booster.

Did you know that Dulse is one of the few vegetables containing natural vitamin B12. Even leafy greens can't compete with Dulse.

Comment
Dulse, or Dillisk in Irish, gives a rich marine flavour due to its omega 3 and 6 content. The seaweed’s initial salty taste develops into a delicious smokey/nutty flavour; it was recently compared to the taste of Bacon ;)



Sea Spaghetti Leaf
Easy to use
Soak the sea spaghetti for 10 minutes to rehydrate and rinse it. After this, simply boil until al dente and add to a pasta dish or a salad once cooled.

Texture
Firm, with a bite to it.

Alaria is a very versatile seaweed, simply chop it into stir-fries, porridge, smoothies or salads and it will add texture, flavour and nutrition to any meal.

This seaweed is rich in iodine which is health-promoting for the thyroid and therefore, pure goodness for our metabolism.

This beautiful brown seaweed can grow up to 3 metres in length and has a sturdy midrib to protect it from the lashing Atlantic waves. Alaria has a distinctive aroma, not unlike tea and due to its pleasantly mild and salty flavour, it can be used in many dishes, both sweet and savoury. 


Carrageen Leaf
Easy to use
For decoction, steep 15g in cold water for 15 mins to rehydrate, then boil for 15 mins in 1.5 l water. Strain the seaweed and add your favourite flavouring, such as lemon, ginger, star anise or honey.

Texture
Light and smooth when cooked.

Health benefits
Carrageen is most famously used as an old fashioned cure for an irritating cough. The seaweeds anti-microbial properties are great for internal and external body parts.

Comment
It’s widely used as a natural thickening agent for savoury and sweet dishes such as jellies and jam.

Kelp Leaf
Easy to use
You can add Kelp to any cooking pot to enrich flavour and nutrition. To keep all the wonderful properties intact, it is better to add this seaweed after the boil, for the duration of the simmer.

Fleshy, with a mild bite to it.

Health benefits
Kelp is very rich in iodine which is great for the thyroid and therefore your metabolism. If you suffer from anemia, this nutritious seaweed might be a perfect pick.
