Smoked Sugar Kelp and Sundried Tomato Risotto

Our Sugar Kelp (Saccharina lattisima) has been gently smoked at 25 degrees for 4 days, to enhance the flavour profile, while still maintaining its nutritional properties. The gentle sweet flavour of this seaweed compliments the sharpness of the sundried tomatoes to complete risotto mix.

Sugar Kelp thrives in the cold, wavy waters of Ireland’s Atlantic shores where it absorbs health-giving nutrients from the pristine surrounding waters. Not only is it high in iodine, Sugar Kelp is also rich in minerals such as calcium, iron and zinc.

Preparation

Prepare 800ml of your favourite stock. Heat 2-3 tablespoons of olive oil in a wide-based pot. Add the contents of the pack, and toast for 2-3 minutes on a high heat. Add 1/4 of the stock to the pan and stir vigorously until absorbed. Repeat this step ladle by ladle with the remaining stock, stirring until all the liquid has been absorbed.

Serving suggestion: Squeeze some fresh lemon juice into your finished dish to elevate the flavour.
